White People Are Angry Again - Minnesota - Next Somalia?”

Unsurprisingly, Fox News opens with a new racist twist on Minnesota’s growing population of Somali Americans. 

For individuals wishing that their employers respect their cultural and religious beliefs, Fox News is predictably outraged going as far as saying that Minnesota is rapidly on it’s way to becoming the next “Somalia.” 

When you’re blinded by your own structured beliefs on what religion can be and should look like, it’s easy to become enraged when your system of comfort is challenged - after all, how dare someone not be like me?

But let’s look at it objectively for once - Fox News is spewing their racist beliefs. And white minnesotans agree.

Lunch or Dinner:  Quick and easy Salad bar!

Oven to 350 

2 chicken thighs
1/2 yellow onion
6 white button mushrooms
10-15 grape tomatoes
1/2 tsp chives
2 Persian cucumbers
1 gala apple
1/2 green bell pepper

Dressing:
1/4 green bell pepper
1/2 shallot
1 clove garlic
1 tsp citrus juice (lemon or lime)
1 tbsp mayo
Splash rice vinegar
1 tsp finely chopped chives

Other things to have on hand:
Olive Oil
Chicken stock
Rice vinegar
Sugar
Soy sauce (optional)

Clean, salt and pepper chicken thighs. Thinly slice onions and mushrooms. Saute in olive oil until slightly brown. Geglaze pan with chicken stock, add 1 tbsp soy sauce if using. Add chicken thighs and boil. Put the pan in the oven to finish cooking the chicken.

Marinated grape tomatoes:
Halve and toss with a splash of rice wine vinegar, pinch of sugar, salt, pepper and a pinch of minced chive.

Prepare other vegetables (and apple) as desired. I chose to use thin slices but a bite sized dice would work just as well.

Finely chop (or pulse in food processor) all the vegetables for the dressing. Combine in a bowl with other ingredients. Stir in chives last and refrigerate.

Check chicken for doneness. Dice from bone and combine with the caramelized onions and mushrooms.

Set out all the items. Include the greens of your choice ( I used hearts of romaine) and possibly a little shredded cheese. You’ve got a delicious lunch or dinner thats both fresh and filling. Enjoy!
